☆ The Elusive Restaurant Group Redefining Korean Dining in New York

Even on a chilly Monday evening, the wait at Cho Dang Gol was more than an hour. Crowds of 20-somethings spilled out of the homey restaurant in Manhattan’s Koreatown, where steam billowed from stone bowls of soondubu jigae in a dining room ornamented with paper lanterns and musical instruments. Some hopeful customers peeked inside, anxious to see if a table had opened up. A few blocks away, diners at Hojokban — a sleeker, more modern restaurant that opened last fall — eagerly snapped photographs of a plate of fried-rice wearing an empty Shin Ramyun noodle cup like a hat. A little to the south, Atomix, a Korean fine-dining restaurant with two Michelin stars, was booked solid through the next month.

Peru’s capital city – and undoubtedly its gastronomic capital – had a tremendous showing Tuesday at The World’s 50 Best Restaurants awards, taking the No. Four Lima restaurants made the 50 Best list: Central at No. Central is the first South American restaurant to earn the “World’s Best” title. The awards have been presented in the Windy City since 2015 and are set to remain there through 2027. Like last year, much of the 2023 show was focused on showcasing the new push for greater diversity. The James Beard Foundation has been mired in controversy over the past few years. ☆ Restaurant Review: Naro Makes New Magic From Classic Korean Dishes

At their groundbreaking restaurant Atomix, Junghyun and Jeongeun Park seem to have the keys to a secret room filled with flavors that New York’s older Korean restaurants barely hint at. Nearly every course on the elaborate tasting menus is made up of a dozen or more ingredients. You can, for instance, eat a sorbet flavored by the fleshy seed stalks of the Japanese raisin tree. But novelty is not the main point of this younger restaurant. While Atomix tries to expand our notions of what modern Korean cuisine might contain, Naro’s executive chef, Nate Kuester, takes a different tack.
